Useful information about supercooling
‘Supercooling’ means storage at a temperature just below freezing and improves the quality of the stored goods compared with traditional freezer storage.
During supercooling, ice crystals form in the muscle tissue without the product actually being frozen, and the cold is compartmentalised in the product. Unlike ordinary freezing, the crystals in the cells do not puncture the tissue.
The core of the fillet does not freeze and remains at a higher temperature than the surface. The principal advantage of supercooling is that the goods retain their characteristics as fresh produce and their shelf-life is increased by a factor of two or three. This presents many opportunities for companies in the food industry. With supercooling, more types of goods which are currently sold as frozen can be sold as fresh produce at a higher price.
The long shelf-life of the fresh produce enables the owners of goods to make use of new logistical solutions. Transport by ship offers substantial cost savings and is a far more environmentally friendly solution. The longer shelf-life offers a longer sales window, which reduces the risk of wastage.
